Tame animals as a hunter:

Equip the skill book the man gives you. After that, upgrade the skill by
pressing “B” then upgrading it to as many skill points as you have.
Drag the Tame skill to a number (for example, 1, 2, 3, 4, 5, 6, 7, 8, 9).
At the bottom right of the screen is a button.
Click it then click the auto/manual attack button.
It is on manual when there is only one sword.
Then attack “preferable” a black wolf with a weapon until its health
(which you can view by highlighting the red bar under its name) is about
half gone. Switch to your fists and weaken it to about 15-10 HP.
Right-click the skill “Tame”. This sometimes will not work.
The HP remaining differs with the animal you are trying to tame.
